Background
When Restaurant Struktur moved to a new space in Aalborg, owner Dennis Juhl wanted to create an intimate brasserie atmosphere with a light, Nordic look. While their previous restaurant was larger and more spacious, the new setting was designed to be closer and feature cosy nooks.
“We wanted to find a balance between the cosy brasserie style and the light, wooden Nordic look. Naturally, we needed new dining chairs that fit perfectly into the space we were creating,” explains Dennis Juhl.
The Challenge
For Dennis Juhl, it was an absolute requirement that the chairs shouldn’t just look good, but also provide a fantastic seating experience for absolutely every guest. However, he quickly found that it’s a difficult market to navigate.
“It’s easy to find a really beautiful chair, and just as easy to find one with excellent comfort. The real challenge is finding the perfect combination of elegant design and great comfort,” he says.
For Dennis, it was crucial that the chair could suit the many different guests visiting the restaurant:
“A restaurant chair must deliver on so many fronts. When you buy chairs for your own home, you base the choice on your own needs and body type. But in a restaurant, it’s essential that the chair is practical and comfortable for all guests, regardless of their height or build.”
The Solution
The choice fell on the VL118 chairs from VERMUND. For Dennis and his team, they perfectly met the demands for looks, comfort, and smart functionality for a busy workday.
To match the restaurant’s style, the chairs were customised with light wooden backrests that contrast with the dark wooden floors, while warm, cognac-coloured leather upholstery ties the whole interior design together.
Also, the chair’s practical features played a key role in the daily running of the restaurant:
“The reason we chose the model with a wooden back instead of a fully upholstered version is actually the small rubber edge under the armrest. This lets us hang the chairs easily and securely on the tables. It saves our staff a massive amount of time when mopping the floors. At the same time, it’s a huge advantage that they can be stacked when we need to make room for larger,” says Dennis Juhl.
“The VERMUND chair is beautiful, neat, and elegant to look at, but also incredibly practical. It’s rare to find a chair with such good comfort that also manages to suit so many different types of guests.”

The Result
For Restaurant Struktur, it’s essential to create a complete experience where guests feel welcome and are in no rush to leave. Here, the choice of the VL118 plays a central role in the new restaurant.
“The comfort helps guests sit for longer, and we really want people to stay. Many other beautiful designer chairs become incredibly hard to sit in if you don’t sit with a perfectly straight back. In this chair, you can easily lean back and enjoy your food for hours without any problems,” states Dennis.
The enthusiasm for the VL118 chair has actually been so great that Dennis Juhl decided to buy them for his own home too.
“It is an incredibly good chair. Once we felt how fantastic they are to sit in here at the restaurant, the choice was pretty easy, so I ended up buying them for my own dining room as well. It just works for most people,” concludes Dennis with a smile.
